Corn Gluten Meal is a by-product obtained from a wet- milling process of corn during corn starch extraction. Other products produced during this process include starch, germ oil meal, corn gluten feed and corn broth.

After cleaning and removing foreign matter, corn kernels are typically soaked in water containing sulfur dioxide for 24-40 hours at 48-52°C. The role of sulfur dioxide is to weaken the gluten matrix by breaking inter- and intermolecular sulfide bonds. Soaking at 45-55° C promotes the growth of lactic acid bacteria, which produce lactic acid, lowering the pH of the medium and thus limiting the growth of most other organisms.

Corn Gluten Meal is commonly used as livestock feed containing about 65% crude protein. It can be a source of protein, energy, and pigments for livestock, and is used in pet foods for digestibility.
